- Prepare the Aromatics: Peel and finely slice the garlic. Pick and finely chop 2 sprigs of rosemary.
- Set Up the Air Fryer: Remove the rack from the smaller air-fryer drawer. Scatter in the sliced garlic and chopped rosemary.
- Prepare the Fish: Drizzle a little olive oil over the frozen fish fillets. Wrap each fillet with two slices of prosciutto, ensuring they are well-covered.
- Air Fry the Fish: Place the wrapped fish fillets into the air fryer drawer on top of the garlic and rosemary. Cook at 200°C (400°F) for 15-20 minutes, or until the prosciutto is crispy and the fish is cooked through.
- Prepare the Beans: While the fish is cooking, place a saucepan over medium heat. Add a drizzle of olive oil, the remaining 2 sprigs of rosemary, and the blanched almonds. Cook for a few minutes until the almonds are golden.
- Add Sun-Dried Tomatoes: Chop the sun-dried tomatoes and add them to the pan. Cook for another 2 minutes.
- Add Beans and Spinach: Drain and rinse the white beans, then add them to the pan along with the baby spinach. Cook until the spinach has wilted and everything is heated through.
- Season the Beans: Add a splash of red wine vinegar, the juice of half a lemon, and the balsamic vinegar. Stir well and season with salt and pepper to taste.
- Serve: Spoon the garlicky beans onto plates, place the crispy prosciutto-wrapped fish on top, and finish with a grating of Parmesan cheese.
