Ingredients

  • 2 cloves of garlic
  • 4 sprigs of rosemary
  • Olive oil
  • 20 g blanched almonds
  • 40 g sun-dried tomatoes in oil
  • 2 x 150g frozen white fish fillets e.g., cod or haddock
  • 4 slices of higher-welfare prosciutto or Parma ham
  • ½ a lemon
  • 1 x 400g tin of white beans e.g., cannellini or butter beans
  • Red wine vinegar
  • 20 g Parmesan cheese
  • ½ tablespoon balsamic vinegar
  • 125 g baby spinach

Equipment

  • Air-fryer

Method

  1. Prepare the Aromatics: Peel and finely slice the garlic. Pick and finely chop 2 sprigs of rosemary.
  2. Set Up the Air Fryer: Remove the rack from the smaller air-fryer drawer. Scatter in the sliced garlic and chopped rosemary.
  3. Prepare the Fish: Drizzle a little olive oil over the frozen fish fillets. Wrap each fillet with two slices of prosciutto, ensuring they are well-covered.
  4. Air Fry the Fish: Place the wrapped fish fillets into the air fryer drawer on top of the garlic and rosemary. Cook at 200°C (400°F) for 15-20 minutes, or until the prosciutto is crispy and the fish is cooked through.
  5. Prepare the Beans: While the fish is cooking, place a saucepan over medium heat. Add a drizzle of olive oil, the remaining 2 sprigs of rosemary, and the blanched almonds. Cook for a few minutes until the almonds are golden.
  6. Add Sun-Dried Tomatoes: Chop the sun-dried tomatoes and add them to the pan. Cook for another 2 minutes.
  7. Add Beans and Spinach: Drain and rinse the white beans, then add them to the pan along with the baby spinach. Cook until the spinach has wilted and everything is heated through.
  8. Season the Beans: Add a splash of red wine vinegar, the juice of half a lemon, and the balsamic vinegar. Stir well and season with salt and pepper to taste.
  9. Serve: Spoon the garlicky beans onto plates, place the crispy prosciutto-wrapped fish on top, and finish with a grating of Parmesan cheese.
