Ingredients
  

  • 350 g self-raising flour plus extra for dusting
  • 1 teaspoon sea salt
  • 1 teaspoon baking powder if using plain flour
  • 350 g plain yogurt Greek-style or regular
Optional for brushing:
  • Olive oil or melted butter
  • Fresh herbs like parsley or coriander
  • Crushed garlic

Method
 

  1. In a large mixing bowl, combine the flour, salt, and baking powder if using.
  2. Add the yogurt and mix with a fork until the dough starts to come together.
  3. Tip the dough onto a floured surface and knead briefly (1–2 minutes) until smooth.
  4. Divide the dough into 6 to 8 equal-sized pieces.
  5. Roll out each piece into a rough oval or circle about ½ cm thick.
  6. Heat a dry non-stick frying pan over medium-high heat.
  7. Cook each flatbread for about 1–2 minutes on each side, or until golden brown and puffed up.
  8. Optional: Brush with olive oil or butter and sprinkle with herbs or garlic as soon as they come off the pan.
