- In a large mixing bowl, combine the flour, salt, and baking powder if using.
- Add the yogurt and mix with a fork until the dough starts to come together.
- Tip the dough onto a floured surface and knead briefly (1–2 minutes) until smooth.
- Divide the dough into 6 to 8 equal-sized pieces.
- Roll out each piece into a rough oval or circle about ½ cm thick.
- Heat a dry non-stick frying pan over medium-high heat.
- Cook each flatbread for about 1–2 minutes on each side, or until golden brown and puffed up.
- Optional: Brush with olive oil or butter and sprinkle with herbs or garlic as soon as they come off the pan.
